Peppercorn is the fruit of the Piper Nigrum.
White peppercorns are the ripe hulled fruit.
Green peppercorns are the unripe fruit
Black peppercorns are the cooked unripe fruit
and Red peppercorns the mature fruit.
Each has its own flavour characteristics so adds more depth of seasoning and flavour to dishes than just using black or white pepper.
In Ayurveda black pepper is used for pacifying kapha and vata increasing pitta.
It enhances digestion and circulation. Stimulates the appetite and helps the respiratory system.
